A cold fermentation process: Our Everyday Kimchi ferments at a cool temperature, which allows for a slower fermentation process. Unlike ambient temperature fermentation, this results in a fresh and bright texture with a signature tangy bite. Our Everyday Kimchi is a nod to traditional Mak [simple] Kimchi, which uses square-cut napa cabbage. The smaller pieces increase the surface area that is exposed to the seasoning, allowing for an accelerated fermentation process that still produces a rich depth of flavor. FULL-BODY, BOLD TASTE: There is a depth of flavor in our Reserve line that sets MIL apart. This rich, savory umami flavor and tangy zing come from our sauce, hand-crafted techniques, and a long fermentation process. GUT-HEALTHY: Kimchi has long been known for its nutritional benefits. On top of the vitamins and minerals from the vegetables, there are tons of diverse beneficial bacteria naturally occurring from the fermentation process.
